Source: Highly regarded, family saison brewery near the French/Belgian border.

Classic saison flavor kicked up a notch. This strain produces high levels of fruity esters backed up by the spicy/clove phenols you expect from a saison culture. It will finish dry, peppery and with a bready richness. Do not be afraid to take this culture to 27-29C when primary fermenting to really drive up the ester production. Fermenting in the lower range will help keep the phenolic character more balanced.
