This Alembic Pot Still is made up of the DigiBoil 35L 2400watt Turbo Boiler with the Alembic Dome Top and Condenser.

These additions transform the Boiler base into an Alembic Pot Still. Instead of stripping flavours to produce a clean spirit like with the T500, this pot still retains and enhances flavours. Use this to retain the natural flavours of your whiskey, rum, or vodka fermentations for an authentic finished product. Alternatively, use in conjunction with a T500 for the ultimate in gin botanical infusion.

** With a few small additions this boiler can be used as a mash tun. You will need:
1. Brew Bag
2. Stick Thermometer

SAMPLE ALL-MALT WHISKEY MASH

– 5.5kg Distillers Malt
– 2kg Dried Malt Extract
Whiskey Yeast
– 20L Clearing Cube

  1. Position boiler so that you are able to place the clearing cube underneath the tap.
  2. Fill boiler with 25L of water and insert the grain bag. Tighten grain bag drawstring around the rim of the boiler
  3. Heat water to 70°C then turn off the heat.
  4. Add cracked grain and dried malt extract, stirring well to dissolve any doughy clumps.
  5. Place lid on boiler and leave to “mash” for 45 minutes. Stir occasionally
  6. Remove grain bag carefully and squeeze out any additional liquid from bag. Top up boiler with an additional 2-3L of water
  7. Bring the liquid to the boil for 45minutes
  8. Drain wort into sanitised 20L Clearing Cube and screw lid tightly. Leave to cool to 30°C (fermentation temperature)
  9. Transfer cooled wort to fermenter and add yeast
  10. When fermentation is complete, follow the distillation instructions included in your alembic condenser

Please note: If you plan to use the Alembic Dome and Condenser with the boiler as a still, you will need permission from the ATO. You will also need a license from the ATO if you plan to use the still to make alcohol
