Our Peg Leg Spiced Rum Mix creates a classic spiced rum in the style of your seafaring favourites. Allspice, vanilla, cinnamon, star anise, dried ginger and orange come together to create a perfect balance of sweet and spicy to add another dimension to your aged rum. This blend is designed to be paired with our Queensland Diesel Rum Recipe Kit but is also a perfect mix for a rum essence of your choosing. Steep in your favourite spirit for 2 days or up to a week to infuse the flavour from the spices. Makes 2 litres of OP Rum but can be diluted down to your desired intensity.

Preparation:
Split the vanilla beans with a knife and (optionally) bruise the allspice berries and star anise with a mortar and pestle before adding to your botanical basket or steeping in your rum using one of the methods below:

  • Method 1 (Maceration):
    Soak in rum – 2 litres at 50% ABV or higher is ideal – for at least 48hours and up to one week before transfering the spiced rum through a strainer or cheese cloth.
  • Method 2 (Vapour Infusion):
    Complete a stripping run of your rum wash then prepare your Spiced Rum Mix in a botanical basket (or muslin cloth) and proceed with a spirit run for a mild and refined flavour.
