Native to the Tasmanian coast, Australian Kunzea leaf offers a gentle sweet eucalyptus aroma with notes of honey and lemon. Kunzea will give a sweeter impression when macerated while more earthy notes of tea and rosemary can be achieved through vapour infusion. Pairs well with the more assertive botanicals like pepperberry and lemon myrtle.
Every distillery has its secret mix of botanicals. Besides Juniper Berry, most Gins contain citrus botanicals such as lemon and bitter orange peel, anise, angelica root and seed, orris root, licorice root, cinnamon, cubeb, savoury, lime peel, grapefruit peel.
