MASH: 60min @ 67°C  BOIL: 60min
GRIST
– 3.3kg Voyager Atlas (3.5 EBC)
– 800g Gladfield Wheat (4 EBC)
– 330g Gladfield Chit (2.5 EBC)
– 280g Gladfield Sour Grapes (4.5 EBC)

BOIL ADDITIONS
15g Wai-iti (2.6% AA) (60min)

HOPSTAND/WHIRLPOOL (15min @80°C)
20g Sabro (15.5% AA)
40g Wai-iti (2.6% AA)

FERMENT @ 23°C
> WildBrew Philly Sour *

TARGET FG: 1.008
FERMENT: 10 days** MATURATION: QUICK

* lactic acid-producing yeast. No fear of infection- ferment as you would any other ale strain such as US-05, etc.
** fermentation time will vary depending on yeast strain, fermentation temperature and process. Package when specific gravity is stable over two days.
