Lychee and tropical fruit
Topaz is a rare gem. Down to earth or bright and breezy, depending on how you apply her.
Dry hopping with Topaz results in resinous flavours, however with later additions and in higher gravity brews her true flavour qualities really begin to shine, as her pleasant light tropical fruit (think lychee and peach) flavours become more pronounced. A low dose on the hot side leads to a pleasant earthy bitterness, while a high dose in the dry hop delivers more exotic lychee and lighter tropical fruit flavour that really shines in a sessional setting.
