A complex and widely used spice with numerous applications from gins to liqueurs. Flavour compounds within star anise are responsible for the cloudy “louching” effect seen in ouzo and absinthe.

Every distillery has its secret mix of botanicals. Besides Juniper Berry, most Gins contain citrus botanicals such as lemon and bitter orange peel, anise, angelica root and seed, orris root, licorice root, cinnamon, cubeb, savoury, lime peel, grapefruit peel.
